Options can be limited when you want to develop or market whole pieces of lobster meat or lobster tails. But, for nearly half the cost of most species, our Chinese or Taiwan caught slipper lobster tails and meat are a sensible economic option. Its moisture content is higher than most which lends itself nicely for not overcooking. The meat is white and is tolerant of most cooking methods. The tails can be split and grilled, baked or broiled while the meat is an excellent ingredient for mashed potatoes, soups, salads or a variety of creations.

The two main species are Browns (Thenus orientalis) and Pinks (Ibacus ciliatus). They are known for their wide but short flatter tails. If you want to market the lobster name at a value, this is a great starting point.
